Where do we produce salt?
The artisanal marine salt is located in the Bay of Cadiz Natural Park, Spain. We cultivate the salt on sixty-two pools of 8×4 meters.
What is the difference between sea salt and virgin sea salt?
Both are obtained by the natural evaporation of water, due to the action of the sun and the wind in the summer months. The difference is that SEA SALT must go through an industrial process of washing and drying by which it loses all its minerals, and it is also harvested by mechanical methods. VIRGIN SEA SALT, its drying process is by the effect of the sun and wind and its collection and packaging is manual or handmade, so it keeps all its minerals, including iodine, magnesium, calcium, potassium … in addition to less salty food.
What does it mean to be certified organic?
The CAAE Certification Service, as a control and certification body authorized in the European Union, issues a certificate in accordance with the provisions of Article 35 on Organic Production and Labeling of Organic Products. It certifies that Salinas de Cádiz and its brand Dama Blanca comply with the provisions of this regulation.
What do we contribute to biodiversity through artisanal salt cultivation?
Artisanal salt marshes are one of the few places where the intervention of man’s hand increases biodiversity. With our work of restoring the abandoned salt marshes we achieve the recovery of the flora and fauna that are the protagonists of this environment, since there are many birds that choose this space to rest, nest and breed.
In addition, during the months of April and May we suspend the salt cultivation activity, to favor the research work of the University of Cadiz in the breeding of species such as the Avocet, Stilt Sandpiper, Kentish Plover…
How important is it that it is a wet salt?
Our virgin sea salt, fleur de sel flakes and fleur de sel are moist because they have not undergone an artificial drying process. They retain their natural moisture content, around 4%. This is very important, because they also have the presence of other minerals (which sea salt loses during its industrial drying and washing process). These minerals enrich the composition of the salt and provide several health benefits, provided that a maximum of 5 grams is taken per day.
What does it mean that virgin sea salt and flor de sal is rich in minerals such as iodine, potassium, magnesium...?
Virgin sea salt is highly appreciated for its richness in nutrients: minerals and trace elements such as iodine, magnesium, manganese, zinc, calcium, iron and potassium, nutrients that give it healthy and fertile properties, beyond its gastronomic qualities.
What are oligoelements?
Trace elements are chemical substances that are essential for the proper functioning of the body and are involved in metabolism. They are so called because the amount required by the human body is less than 100 mg of each of them.
Does virgin sea salt have additives?
No. It has no refining or processing process and its harvesting process is natural and handmade, so it keeps all its properties.
Why does it enhance the flavor of food?
Due to its composition, it is also a highly valued ingredient in the gastronomic field. As a natural product that is not washed, fleur de sel is completely hypotonic – it does not cause fluid retention – it contains 80% of the trace elements necessary for the body and has more magnesium and potassium than sodium, which intensifies the flavor of food.
